A Spring Salad

I really love all different types of cheese, but this weekend, I was reminded by how delicious goat cheese is.  I have dreams of making this salad or maybe this one. Although I think I will modify it (aka take out a few things to make it simpler and cheaper), goat cheese with cranberries sounds divine.  One thing I've realized is that I really love salads that are a bit sweet and use a less "typical" type of cheese.  Any favorite salad combinations?

Goat cheese is MY favorite!!!

My go to salad is green onions, goat cheese, apples (or pears), peppers, cucumbers, caramelized walnuts (or almonds)and the salad dressing that has a strwberry on it. You know the brand? One has an avocado on it, another a tomato?

I almost thought you made this salad as it looks delicious!

My favorite salad combination is the following: flank steak, tomatoes, gorganzola, mushrooms, walnuts, and then a balsamic dressing.

Yummy! They have it made-to-order at the Suntrust cafeteria in downtown Richmond.

I am such a huge goat cheese fan! I could eat it on everything. I love it on pizza. My fave combo is goat cheese and roasted red peppers on a pizza. Mmmm...mm..mmmmm....
